
The power of collaboration

HG Walter is an independent, family-run butcher based in west London. For more than 50 years it has supplied some of the UK’s best chefs and restaurants with meat that is predominantly sourced from small farms rearing free-range native breeds. The company supports sustainable processes and prides itself on having the best beef in the country.
Recently, HG Walter decided to build a new, 100,000 sq ft future-proofed meat production facility to meet increasing demand. The three-story building needed to include a full range of meat processing and cold store facilities as well as rooms for staff, including washrooms and changing areas.
Over the last few years, our business has kept growing and kept improving, and we needed a site that could match our ambitions as a company.
The new facility was designed and built by Oakley Food Projects, an expert in delivering turnkey solutions for manufacturers in the food, drink and pharmaceutical sectors. The refrigeration contractor was UK specialist Ryan-Jayberg.
Güntner solutions
The contractors chose to install 37 Güntner Cubic VARIO Air Coolers and three Güntner Dual VARIO Evaporators, all using carbon dioxide as the refrigerant.

Güntner Products
Stringent testing brings precise metrics
For Güntner, this project was about far more than simply supplying units. “Faced with a large-scale installation involving multiple technical revisions, evolving design requirements, and complex operational demands, we worked alongside the refrigeration contractor to provide continuous technical expertise and practical solutions at every stage,” says Justin Scofield, Managing Director of Güntner in the UK.
As the project developed and the initial design evolved, Güntner was able to offer valuable guidance on the product specifications that would offer optimum performance for the varying use cases within the facility. All of Güntner’s product designs are subject to stringent testing at our Fürstenfeldbruck HQ in Germany, which means we can provide precise metrics for capacity and performance across a wide range of operational parameters.
Optimizing corrosion prevention
One area of Güntner’s testing that is particularly relevant to food processing facilities is protection against corrosion. “Different kinds of food products will suggest different material combinations in the cooling and refrigeration units,” says Scofield. “Say there’s a brine room or a pickling space or an ageing room, these can bring particles into the airstream that may impact on units further along the production process and cause them to deteriorate.”
Protection against potential corrosion begins with selection of the right materials for every part of a cooling unit. The choices include copper, aluminum and stainless steel, and combinations of these. Drawing on longstanding expertise and in-depth knowledge, Güntner can advise on the best options for any given facility and also explain the trade-offs that may have to be made.

For example, a unit using stainless steel may offer greater protection against certain kinds of corrosion than one using standard materials, but at the same time it will be larger. Therefore, the customer could choose a unit with standard materials on the understanding that it will need to be replaced more regularly.
The benefits of working together
The new facility is now up and running.
“Through ongoing consultation, equipment selections were refined, layouts were adapted, and technical documentation was updated to support project progression and minimize risk,” says Scofield. “This collaborative approach highlights how Güntner consistently adds value through engineering excellence in complex refrigeration projects.”
Güntner’s ability to respond quickly to changes and provide suitable technical solutions was instrumental in allowing Ryan-Jayberg to overcome the challenges presented by this project and to deliver an effective, practical and maintainable solution for HG Walter.
